Roasted Corn Salsa – Recipe

Ingredients

2 medium ears sweet corn in husks
2 medium tomatoes, chopped
1 small onion, chopped
2 tablespoons minced fresh cilantro
1 tablespoon lime juice 1 tablespoon each finely chopped green pepper and sweet red pepper
1 teaspoon minced seeded jalapeno pepper
1/4 teaspoon salt
Dash pepper (a pinch of pepper)
Tortilla chips

Instructions

* Peel back husks of corn but don’t remove silk.
* Place corn in a bowl and cover with water, soak for 20 minutes.
* Drain. Grill corn, covered, over medium-high heat for 20-35 minutes or until husks are blackened and corn is tender, turning several times.
* Let it cool.
* Remove corn from cobs and place in a bowl.
* Add tomatoes, onion, cilantro, lime juice, peppers, salt and pepper.
* Serve with tortilla chips.

Zoe’s collection has been picked up by several major retailers in the US and is about to sign with two UK stores – details of which are yet to be released. The line is receiving rave reviews for its sharply tailored 70′s-inspired trouser suits, faux fur and ‘strong’ outerwear.

Last month, there was a kerfuffle over a sequined black and white dress she designed, when a reporter from Teen Vogue noticed it was almost identical to a vintage item Zoe had used in a shoot for the magazine.

Of the controversy, Zoe told Style.com: “I’ve been subconsciously building this collection in my mind for a long time. There are a million vintage pieces that have inspired me, and every other designer in the world.”

One of the line’s best sellers so far is a black batwing top with rows of gold sequins. The collection launches in US stores for Autumn 2011 and, judging by the hype, looks to be an instant sell-out.
